Just in...Thanks Austin and Rosie for your comments. Just in re-reading this whole thing, I realized that what I'm talking about here is mainly muddling for Mojitos (that have sugar in the recipe). All of this holds true for any muddling, but just in the case of the mojito, you get an extra bit of abrasion. You can always muddle fruit without sugar, or even when using simple syrup!
